Happy July 4th!
Today was the epitome of a dreamy summer day. Greg and I went kayaking down the river, fished, ate lunch on the water and enjoyed our time together in the great outdoors. We came home and saw that the black caps were ready (I’ve been checking them all week.) We have finally gotten ahead of the birds this year. (Cheers all around)
I think black cap and wine berry picking in our yard is my favorite tradition so far in our little house on the hill. You can’t help but smile while doing it. We both beam with pride and joy while we do it because we’re so proud to own this beautiful paradise together. I crave days like today all year long. After a day out on the water, I, of course was inspired to make a cocktail with our gorgeous berry harvest. Que the “ta-da”:
Summer Berry-Mint Fizz
This is going to be a very loose recipe, meant to inspire you to use the best of summer time’s offerings. For us that was our mint plants bushes and black caps. In a couple weeks time I’ll be making this same cocktail with wine berries and rosemary or basil. (If you haven’t tried basil in your summer drinks yet, you MUST.) Anyway, I’m sipping this one as I write to you and it is very refreshing, if I do say so myself.
5+ berries (muddled)
3 mint leaves (muddled)
1 ounce fresh lemon juice
2 ounce club soda
1 1/2 ounce ginger ale
1 ounce Vodka (My favorite is Tito’s)
Serve on ice, of course.. and enjoy!
